Roasted Carrots with Golden Raisins, Almonds and ACV

These Roasted Carrots with Golden Raisins, Almonds, and Fire Brew are a delightful combination of sweet, savory, and tangy flavors. Perfect as a side dish or a light meal!

Ingredients:

  • 1/2 cup golden raisins

  • 1 tbsp Citrus Fire Brew

  • 1 tbsp maple syrup

  • About 6 carrots

  • 1-2 scallion, chopped

  • Olive oil

  • Cumin

  • Salt

  • Pepper

  • 1/3 cup sliced almonds

  • 1 tbsp butter

Instructions:

  1. Mix golden raisins, maple syrup, scallions and Fire Brew in a small bowl. Set aside.

  2. Peel carrots and lay them on a baking sheet. Drizzle with olive oil and sprinkle with cumin, salt, and pepper to taste. Bake at 425°F (220°C) for 20-25 minutes or until the carrots are tender.

  3. In a pan on the stovetop, melt the butter and add the sliced almonds. Cook for about 3 minutes until the almonds are lightly toasted. Remove from heat.

  4. Serve the roasted carrots on a plate. Top with the raisin mixture and the almond mixture.
