Ingredients
● 1 onion, chopped
● 1 carrot, chopped
● 2 cloves garlic, chopped
● 1 cup red lentils, rinsed
● 6 cups vegetable broth
● 2 tablespoons Citrus Fire Brew
● ½ teaspoon cumin
● ¼ teaspoon coriander
● ¼ teaspoon salt
● Black pepper, to taste
● Juice of ½ lemon (optional)
● Fresh herbs for garnish
● Plain yogurt (optional, for serving)
Instructions
1. Prep the Ingredients
Chop the onion, carrot, and garlic. Rinse the red lentils thoroughly.
2. Sauté Aromatics
In a large pot, heat a little oil and sauté the onion, carrot, and garlic until soft and fragrant (about 5–7 minutes).
3. Simmer the Soup
Add the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.
4. Add Fire Brew
Once cooked and slightly cooled, stir in 2 tablespoons of Citrus Fire Brew to brighten and enhance the soup with added wellness benefits.
5. Blend (Optional)
Leave the soup chunky or blend a portion for a creamier texture—totally up to you!
6. Season & Garnish
Stir in the cumin, coriander, salt, and pepper. Adjust seasonings as needed. Serve warm with a squeeze of lemon, a handful of fresh herbs, and a dollop of plain yogurt if desired.
