As Potent as it is Powerful
It was once remarked to the Olympian deity Apollo that Horseradish was worth its weight in gold. For thousands of years, the leaves and roots of this perennial plant were harvested for medicinal and culinary usage. As such, this week begins the Passover tradition in Judaism, which means many observing the holiday will find Horseradish at their dinner table.
Horseradish is a low-fat, high flavor ingredient which packs a serious punch of Vitamin C. The main chemical compound in Horseradish also fights foodborne
bacteria and pathogens (such as E. Coli or Listeria) and is responsible for the pungent but invigorating taste you’ve come to know.
